REALLY RAW HONEY'S SUGGESTIONS TO ENHANCE YOUR ENJOYMENT OF AUTUMN'S HARVEST







1 cup softened butter 
1/4 cup chopped fresh cranberries
1/4 cup Really Raw Honey
1/4 cupCranberry sauce 
2 tbsp. ground walnuts 
1 tbsp. milk 
2 tsp. grated orange peell
CRANBERRY BUTTER 


Whip butter, add rest of ingredients. Will be light pink in color. Spread on your favorite foods!





SUBSTITUTING HONEY for SUGAR






Honey has a greater sweeting power than sugar. Twelve ounces (Weight) of Honey equals one standard measuring cup. In baked goods, reduce the amount of liquid by 1/4 cup for each cup of honey used; add 1/2 teaspoon of baking soda for each cup of honey used; reduce the oven temperature by 25 degrees to prevent overbrowning. For easy removal spray the measuring cup with non-stick cooking spray or oil before adding honey.





DRINKS and SHAKES






REALLY RAW HONEY BANANA SHAKE

1 banana
1 / 2  cup nut milk (or any other milk you like)
3 teaspoons Wheat germ
1 teaspoon Really Raw Honey
1 teaspoon Vanilla

Blend in blender until banana is dissolved. A quick energy builder and nourishing.

OPTIONAL-Add bee pollen


REALLY RAW HONEY 
LEMONADE *** ORANGEADE *** LIMEADE*** GRAPEFRUITADE

2 cups citris fruit juice 
2 quarts of water
Really Raw Honey (to your taste)
Ice

Makes 2 � quarts. Blend and serve over ice.


HONEY-LEMON DRINK

Makes 2 quarts

1 cup fresh lemon juice
1 / 2  cup fermented Really Raw Honey
1 / 2   cup homemade whey
1 / 2  teaspoon grated nutmeg
filtered water

Mix honey with lemon juice and place in a 2-quart glass container. Add whey, grated nutmeg and water to fill the container. Cover and leave at room temperature for 2-3 days. Transfer to the refrigerator, cover tightly, and store for 2-3 weeks. Serve plain or with added soda water.

CREAMY HONEY-TANGY SLAW DRESSING

1 / 2 cup Really Raw Honey
1 / 2 cup cider vinegar
2 tablespoons horseradish
1 cup mayonnaise

Blend well - serve on slaw.


REALLY RAW HONEY FRUIT DRESSING

2 tablespoons Really Raw Honey
1 cup Mayonnaise
1 / 3 teaspoons Lemon Juice
1 / 4 teaspoons ground Ginger

Blend well - serve on salads.


REALLY RAW HONEY PINEAPPLE DRESSING

1 / 2 cup Really Raw Honey
1 / 4 cup Lemon Juice
1 / 2 teaspoon Sea Salt
3 tablespoons Crushed Pineapple

Mix well - serve on salads.


REALLY RAW HONEY MUSTARD DRESSING

2 / 3 cup water
1 / 2 cup lemon juice
4 tablespoons Really Raw Honey
2 tablespoons Prepared mustard
1 teaspoon Salt
1 / 2 teaspoon Paprika
2 cloves garlic, crushed

Mix well and shake. 
Chill one hour before serving. 
Makes 1 1 / 2 cups.


REALLY RAW HONEY FRENCH DRESSING

2 / 3 cup Olive Oil 
1 / 4 cup Vinegar
1 / 4 cup Really Raw Honey
1 / 8 teaspoon Ground Black Pepper
1 / 8 teaspoon Dry Mustard
1 / 4 teaspoon Sea Salt

Mix well. Serve on salad.


SPICED HONEY BUTTER

1 / 4 cup Really Raw Honey
1 / 2 cup butter, softened to room temperature
1 teaspoon grated orange peel
1/2 teaspoon ground cinnamon

Combine alll ingredients and mix well. Serve with biscuits, bread, or toast. Makes about 3/4 cup.





DESSERTS






REALLY RAW HONEY BALLS

4 cups ground nuts, seeds or nut butter
1 cup dried unsweeted coconut
2 / 3 cup unsweeted carob powder
1 & 1 / 2 cups Really Raw Honey

Mix all ingredients together by hand or in a food processor. Roll into balls. For variety roll in groundnuts, sesame seeds, or coconut for extra elegance. For a crunchy feel, add 1 / 4 cup of nut pieces at end. Refrigerate or freeze for extended life.


FUDGE SAUCE / FROSTING

Blend Really Raw Honey with cocoa powder or carob powder until desired texture and flavor are achieved.


CREAM CHEESE ICING

8 Ounces cream cheese, softened
1/3 cup Really Raw Honey
1 teaspoon vanilla

Blend until smooth 
Ice cake while warm


REALLY RAW HONEY MERINGUE

2 egg whites
1 / 4 to 1 cup Really Raw Honey
Dash salt

Beat egg whites & salt until stiff, but not too dry. Add Really Raw Honey and beat well until thick & frothy





JORDAN RUBIN SMOOTHIE






*SYNERGY SMOOTHIE (Jordan Rubin- Garden of Life)

Combine the following ingredients in a high-speed blender:

Either 10oz. 30-hour cultured goat�s yogurt (probiogurt) 
or 10 oz. of full fat coconut milk (Thai brand is a good one)
1 tablespoon coconut oil
1 to 2 raw Omega whole eggs (Gold Circle Farms / DHA eggs)
1 tablespoon cold-pressed flax seed (Barleans Flax Oil)
1 to 2 tablespoons of Really Raw Honey 
1 tablespoon goats milk protein powder (Goatein)
1 / 2 to 1 cup fresh or frozen fruit (berries, bananas, pineapple, etc.)
1 to 2 scoops high-potency digestive enzyme powder (Omega-Zyme)
Vanilla extract (optional)

Properly prepared this smoothie is an extraordinary source of easy to absorb nutrition. FERMENTED HONEY CRACKERS

Makes about 30 crackers

1 / 2 cup plain whole yogurt
1 / 2 cup (1 stick) unsalted butter, preferably cultured
2 & 1 / 2 cups freshly ground wheat, spelt or kamut flour
1 / 4 cup fermented honey
1 teaspoon sea salt
unbleached flour to prevent sticking

Leave butter at room temperature to soften. Mix yoghurt, butter, honey and salt together with an electric mixer. Gradually add the freshly ground flour. Form dough into a ball, place in a bowl and cover with a towel. Leave at room temperature for 12-24 hours.

Rub a 9-inch by 13-inch pyrex pan with butter and dust with white flour. Dust your hands with white flour to prevent sticking and then press the dough into the pan. Score with a knife so the dough will separately easily into rectangular �crackers.� Dehydrate by placing in an oven set at 150 degrees until the crackers dry out completely�this will take a day or two. Break into crackers and store in an air tight container in the refrigerator.

HONEY TOPPING for FERMENTED HONEY CRACKERS

Makes 1 & 1 / 2 cups
1 & 1 / 4 cup good quality cream, preferably raw
1 tablespoon cultured cream, such as creme fraiche
2 tablespoons fermented Really Raw Honey
1 tablespoon liqueur, such as cognac or armagnac

Mix all ingredients together with a wire whisk and place in a glass mason jar. Cover and leave at room temperature overnight, then refrigerate. The cream should become very thick when chilled. Use as a topping for fruit or other desserts.


HONEY-BERRY BEVERAGE

Makes 2 quarts

2 cups blackberries, raspberries or boysenberries, fresh or frozen
1 / 4 to 1 / 2 cup fermented honey
1 / 2 cup whey
2 teaspoons sea salt
filtered water

Place berries in a food processor and process with a little water until smooth. Pass through a strainer to remove the seeds. Blend with honey, whey and salt and place in a 2-quart glass container. Add enough water to fill the container. Cover and leave at room temperature for 2-3 days. Carefully remove any foam that rises to the top. Cover tightly and store in the refrigerator for several weeks. The sediment will fall to the bottom. To serve, pour out slowly so as not to disturb the sediment.

2 & 1 / 2 pieces of Ezekiel Sprouted Grain Bread
4 tablespoons. Really Raw Honey
8 tablespoons organic almond butter

Salads






Picnic Bean Salad

4 cups Red Kidney Beans
1/2 cup diced onion
3/4 cup diced pickle
3 hard boiled eggs, diced
2 tablespoons cider vinegar
3 tablespoons. Really Raw Honey

Blend all ingredients. Chill at least one hour before serving. Best if chilled 24 hours before serving to let flavors combine. Serves 8.





�HONEY� for SKIN CARE!






FACIAL TREATMENT

1 / 3 cup finely ground oatmeal
3 tablespoon Really Raw Honey , or enough to make a smooth paste
1 tablespoon rose water or orange flower water

Blend oatmeal with honey until well mixed. If too thick and unmanageable, add a little rose water or orange flower water. Spread over clean face with the exception of your eyes and leave on for � hour. Relax while it is on. Remove this, a good astringent should be applied to tone the skin.


FACIAL CLEANSER

2 tablespoons finely ground almonds
1 tablespoon Really Raw Honey
1/2 tablespoon lemon juice

Blend almonds, honey and lemon juice. rub gently into face. rinse with warm water


SOOTHING SKIN CLARIFIER FOR ACNE

1/2 cup warn water
1/4 tablespoon salt
Dab of Really Raw Honey

Mix warm water and salt. Using a cotton ball, apply mixture directly to blemish. Maintain pressure with cotton ball for several minutes, to soften blemish. Using a cotton swab, dab Really Raw Honey on blemish; leave on 10 minutes. Rinse and pat dry. You can use a dab of Really Raw Honey anytime on blemishes!


FACIAL TONER

1 peeled cored apple
1 tablespoon Really Raw Honey

In a blender puree apple and honey. Smooth over face. Leave on 15 minutes. Rinse with cold water.


FIRMING FACIAL MASK

1 egg white
1 tablespoon Really Raw Honey
1 teaspoon glycerin
Flour

Whisk together egg white, honey, and glycerin. Add flour to form a paste. Smooth over face and throat. Leave on 10 minutes. Wash off with warm water.


FACE LOTION

1 tablespoon sweet almond oil 
2 tablespoons honey

Blend together. This lotion should be used after the skin has been thoroughly cleansed. Leave on skin for � hour. Remove with a soft cloth and tepid water.


FACE SCRUB

1 / 2 cup almond meal 
Really Raw Honey

Mix to form a thick paste. Scrub face with paste, paying close attention to oily areas. Leave on for a few minutes. Remove with tepid water and a soft cloth. Your skin will be soft and refreshed!


SKIN SOFTENING BATH

Add 1/4 cup of Really Raw Honey to water for a fragrant silky bath.


SMOOTHING SKIN CONDITIONER

1 teaspoon almond oil 
1 teaspoon Really Raw Honey
1/4 teaspoon lemon juice

Mix oil, honey, and lemon juice. 
Rub into hands, elbows, heels, and anywhere skin feels dry. Leave on 10 minutes. 
Remove with tepid water and a soft cloth. Your skin will be soft and refreshed!


HAIR SHINE

4 cups (1 Quart) Water
1 teaspoon Really Raw Honey
1/4 teaspoon lemon juice

This recipe is for those who wish to use shampoo in addition to honey but shampoo is not necessary. Honey cleans in addition to aiding the health of the hair and scalp.
Mix water, honey, and lemon juice. 
After shampooing, pour mixture through hair. Do not rinse out. Dry as normal.
